If it doesn’t show up on the list, just type in the entire lemmy.gmhy.ml and continue, the list doesn’t show you all lemmy instances just the ones the devs put on the list.

You are not restricted to use the instances in the dropdown – just write “lemmy.fmhy.ml” in the instance field.

Click the waffle on the upper left. Click the word “Anonymous”. You should start seeing login stuff. I couldn’t find it either 😜.

You can log to any instance by typing it. The list is only of popular ones but you can manually type it in the insert box

Just type the instance url (excluding any https:// prefix) directly into the instance box when you’re logging in.
